Abstract The soymilk is a ready-to-eat, nutritious and naturally cholesterol-free product. Several soybean specialty cultivars were developed in Brazil in order to increase the human consumption of soybean products. The aim of this work was to evaluate the nutritional composition and consumer acceptance of soymilk from three soybean cultivars with special features such as high-protein and isoflavone contents, mild flavor and lipoxygenase-free compared to three conventional ones. The soymilk was obtained after blanching with a bicarbonate solution, grinding, centrifugation and pasteurization. The physicochemical and nutritional evaluation data were analyzed using Analysis of Variance (ANOVA) and Tukey’s test to check differences among means, and the consumer data through cluster analysis and internal preference mapping. The lipoxygenases were inactivated after thermal processing. There were significant differences among soybean cultivars and soymilks related to the protein, isoflavones, oil, and sugar contents and soymilk yield (p < 0.05). The BRS 133 and BRS 284 cultivars and soymilks presented the highest total isoflavone content (p < 0.05). Regarding the overall consumer acceptance, there were significant differences among cultivars (p < 0.05) with means ranging from 5.9 to 6.7 and the lower score was obtained by BRS 267. However, the cluster analysis identified three consumer segments according to preference similarity. The cultivars BRS 284 and BRS 267 reached the highest mean among the consumers of segment 1 (6.8 and 6.7 respectively). The consumers of segment 2 preferred the cultivar without lipoxygenases, BRS 213 (mean of 7.5) while segment 3 preferred the BRS 133 (mean of 7.4). The process of blanching of soybean with bicarbonate solution, grinding with boiling water and pasteurization mitigated the differences between conventional and specialty cultivars and the six cultivars evaluated were suitable for soymilk production.

Resumo O extrato de soja é um produto pronto para o consumo, nutritivo e naturalmente livre de colesterol. Diversas cultivares especiais de soja foram desenvolvidas no Brasil com o objetivo de aumentar o consumo humano de produtos derivados da soja. O objetivo deste trabalho foi avaliar a composição nutricional e a aceitação pelo consumidor do extrato de soja de três cultivares de soja com características especiais, como alto teor de proteínas e isoflavonas, sabor suave e livre de lipoxigenases, em relação a três cultivares convencionais. O extrato de soja foi obtido após branqueamento com solução de bicarbonato, trituração, centrifugação e pasteurização. Os resultados foram analisados por meio do teste de Anova e Tukey, para verificar diferenças entre as médias, e os dados do consumidor, por meio de análise de agrupamento e mapa de preferência interno. As lipoxigenases foram inativadas após o processamento térmico. Houve diferenças significativas entre as cultivares de soja e os extratos obtidos em relação aos teores de proteína, isoflavonas, lipídios e açúcares, e para o rendimento de extrato (p < 0,05). As cultivares BRS 133 e BRS 284 apresentaram o maior teor de isoflavonas totais (p < 0,05). Em relação à aceitação geral pelo consumidor, houve diferenças significativas entre as cultivares (p < 0,05), sendo que a menor média foi obtida por BRS 267. No entanto, a análise de cluster identificou três segmentos de consumidores de acordo com a similaridade de preferência. As cultivares BRS 284 e BRS 267 alcançaram a maior média entre os consumidores do segmento 1 (6,8 e 6,7, respectivamente). Os consumidores do segmento 2 preferiram a cultivar sem lipoxigenases, BRS 213 (média de 7,5), enquanto o segmento 3 preferiu a BRS 133 (média de 7,4). O processo de branqueamento da soja com solução de bicarbonato, trituração com água quente e pasteurização atenuou as diferenças entre as cultivares convencionais e especiais, e as seis cultivares avaliadas foram adequadas para a produção de extrato de soja.

Resumo: O objetivo deste trabalho foi determinar os teores de óleo, proteína, ácidos graxos, isoflavonas e antocianinas, em grãos de soja de diferentes linhagens e estádios de maturação. Foram feitas avaliações quantos aos perfis químicos das linhagens com tegumento preto (BRM09-50995) e amarelo (BRM11-51428 e BRM08-50643), colhidas nos estágios de maturidade R6 (sementes imaturas), R7 (maturidade fisiológica) e R8 (maturação completa). Os teores de óleo e proteína aumentaram do estágio R6 para o R8, e BRM11-51428 apresentou o maior teor de proteína. Os teores de ácidos graxos palmítico, esteárico e linolênico foram maiores em R6, e os teores de ácidos linoleico e oleico foram maiores em R7 e R8, respectivamente. No estágio de crescimento R8, BRM11-51428 e BRM09-50995 apresentaram os maiores teores de ácido oleico e linoleico, respectivamente, e o menor teor de ácido linolênico. Os teores de isoflavonas glicosídeos e agliconas foram maiores em R8, enquanto as formas de malonil foram maiores em R7. Agliconas totais aumentaram cerca de três vezes de R6 para R8. BRM09-50995 apresentou o maior teor de isoflavonas totais e antocianinas, principalmente no estágio R8, o que torna esta linhagem uma opção para processar alimentos funcionais de soja.

Abstract: The objective of this work was to determine the oil, protein, fatty acid, isoflavone, and anthocyanin contents in soybean grains of different breeding lines and maturity stages. Evaluations were performed for the chemical profiles of black- (BRM09-50995) and of yellow-seed-coat (BRM11-51428 and BRM08-50643) breeding lines, harvested at the R6 (immature seeds), R7 (physiological maturity), and R8 (full maturity) maturity stages. Oil and protein contents increased from the R6 to the R8 stage, and BRM11-51428 showed the highest protein content. Palmitic, stearic, and linolenic fatty acids were higher at R6, and linoleic and oleic acids were higher at R7 and R8, respectively. At the R8 growth stage, BRM11-51428 and BRM 09-50995 showed the highest contents of oleic and linoleic acids, respectively, and the lowest content of linolenic acid. The amounts of isoflavone glucosides and aglucones were higher at R8, while malonyl forms were higher at R7. Total aglucones increased about three times from R6 to R8. BRM09-50995 showed the highest content of total isoflavones and anthocyanins, mainly at the R8 stage, which makes this lineage an option to process functional soybean food.

Resumo: O objetivo deste trabalho foi avaliar os efeitos da concentração de zinco na salmoura acidificada e do tempo de pasteurização sobre o teor de zinco, a coloração e as características físico-químicas e microbiológicas da soja (Glycine max) do tipo vegetal em conserva. Utilizou-se um delineamento composto central rotacional 22, cujas variáveis foram a concentração de zinco na salmoura e o tempo de pasteurização, o que resultou em 12 ensaios. Uma formulação de conserva foi desenvolvida e comparada com grãos em conserva sem adição de zinco e com grãos frescos, com avaliação microbiológica. A adição de zinco dentro dos limites definidos pela Food and Drug Administration (≤75 ppm) não afeta as características físico-químicas e microbiológicas dos grãos em conserva submetidos a 10 min de pasteurização. A salmoura acidificada e com adição de zinco aumenta o conteúdo de glicosídeos isoflavonas, diminui o conteúdo de malonil glicosídeos e tem menores conteúdos de sacarose e estaquiose do que grãos frescos. A adição de zinco não influencia significativamente a coloração dos grãos.

Abstract: The objective of this work was to evaluate the effects of zinc concentration in acidified brine and of pasteurization time on the zinc content, color, and physicochemical and microbiological characteristics of canned vegetable-type soybean (Glycine max). The 22 central composite rotational design (CCRD) was used, with zinc concentration in the acidified brine and duration of pasteurization as variables, resulting in 12 assays. A canning formulation was developed and compared with canned-vegetable type soybean without zinc and with fresh-vegetable type soybean, with microbiological evaluation. Zinc addition within the limits defined by Food and Drug Administration (≤75 ppm) does not affect the physicochemical and microbiological characteristics of canned grains, subjected to 10 min pasteurization. Acidified brine containing zinc increases the content of isoflavone glycosides, decreases the content of malonyl glycosides, and has lower-sucrose and stachyose contents than fresh grains. Zinc addition does not significantly influence the color of grains.

Resumo Brotos de soja são vegetais de consumo direto, obtidos de grãos germinados, que são utilizados há séculos nos países orientais. Suas características nutritivas e a facilidade de produção têm chamado a atenção de consumidores do Ocidente. Sementes pequenas com alto poder germinativo e vigor são qualidades inerentes para produção de brotos. Na Embrapa, essas características têm sido contempladas no programa de melhoramento genético para obtenção de cultivares de soja especiais para o consumo humano. O objetivo deste trabalho foi produzir e caracterizar a qualidade de brotos de soja obtidos a partir das linhagens BRM09-10505, BRM10-60599 e PF133002, em comparação com a cultivar BRS 216, desenvolvida para ser utilizada como brotos ou natto. Os brotos foram produzidos em bandejas dispostas em câmara de germinação (25°C e 99% de umidade relativa). Sementes e brotos foram avaliados nos seguintes aspectos: teor de proteínas, lipídios, cinzas, isoflavonas, inibidor de tripsina Kunitz, ácido fítico, comprimento e peso dos brotos. As sementes da BRM09-10505 apresentaram 95% de poder germinativo, seguida pela BRS 216 (93%) e pelas outras linhagens (88%, em média). A germinação pela mobilização dos compostos químicos aumentou os teores de proteínas (8,96%) e de isoflavonas (56,00%) e reduziu os teores de inibidor de tripsina Kunitz (26,91%) e de ácido fítico (13,78%). A cultivar BRS 216 apresentou o maior teor de proteína nas sementes (41,96 g.100 g-1) e nos brotos (47,70 g.100 g-1). A linhagem BRM09-10505 apresentou maior teor de inibidor de tripsina nas sementes (27,56 mg IT g-1) e nos brotos (19,62 mg. IT g-1); maior concentração de isoflavonas totais nas sementes (340,10 mg.100 g-1) e nos brotos (406,38 mg.100 g-1), e menor teor de ácido fítico nos brotos (1,13 g.100 g-1). Após quatro dias de germinação, destacaram-se, quanto ao comprimento e ao peso, a linhagem BRM09-10505 (8,03 cm e 214,36 g) e a cultivar BRS 216 (7,31 cm e 140,93 g). Entre as linhagens testadas, a linhagem BRM09-10505 apresentou bom potencial para produção de brotos.

Summary Soybean sprouts are vegetables for direct consumption obtained from germinated grains, which have been used for centuries in Eastern countries. Their nutritional characteristics and ease of production have attracted the attention of consumers from Western countries. Small seeds with high germinating power and vigour are inherent qualities for shoot production. At the Brazilian Agricultural Research Corporation - Embrapa, these characteristics have been considered in the genetic breeding program to obtain special soybean cultivars for human consumption. The aim of this study was to produce and characterize the quality of soybean sprouts from the genetic lines BRM09-10505, BRM10-60599 and PF133002, in comparison with the cultivar BRS 216, which was developed for use as sprouts and natto. Trays placed in a growth chamber (25 °C and 99% relative humidity) were used for produce the sprouts. The protein, lipid, ash, isoflavones, Kunitz trypsin inhibitor and phytic acid contents were analysed in the seeds and sprouts. The length and weight of the sprouts were also determined. Seeds of the line BRM09-10505 showed 95% germinating power followed by BRS 216 (93%) and the other lines (88% on average). Germination, by mobilizing chemical compounds, increased the protein (8.96%) and isoflavone (56.00%) contents, and reduced the concentrations of the Kunitz trypsin inhibitor (26.91%) and phytic acid (13.78%). The cultivar BRS 216 presented the highest protein content in the seeds (41.96 g.100 g-1) and sprouts (47.70 g.100 g-1). The line BRM09-10505 had the highest trypsin inhibitor content in the seeds (27.56 mg IT g-1) and in the sprouts (19.62 mg IT g-1); the highest total isoflavone contents in the seeds (340.10 mg.100g -1) and in the sprouts (406.38 mg.100 g-1); and the lowest phytic acid content in the sprouts (1.13 g. 100 g-1). After four days of germination, the length and weight of the sprouts were, respectively, 8.03 cm and 214.36 g for line BRM09-10505 and 7.31 cm and 140.93 g for BRS 216. Of the lines tested, BRM09-10505 showed good potential for sprout production.

Resumo: O objetivo deste trabalho foi avaliar o efeito das condições de processamento do tempeh de soja sobre o conteúdo de isoflavonas β-glicosídeos e sobre sua bioconversão em agliconas. Diferentes tempos de maceração (6, 12 e 18 horas), cozimento (15, 30 e 45 minutos) e fermentação (18, 24 e 30 horas) com Rhizopus oligosporus a 37°C foram avaliados na preparação do tempeh. Foram utilizados grãos da cultivar 'BRS 267', e o experimento foi realizado de acordo com um delineamento composto central (23). As funções-respostas compreenderam o teor de genistina, malonildaidzina, malonilgenistina, daidzeína e genisteína, quantificadas por cromatografia líquida de ultraeficiência (CLUE). Os tempos de maceração, cozimento e fermentação alteraram o conteúdo, o perfil e a distribuição das diferentes formas de isoflavonas no tempeh. A maior bioconversão de β-glicosídeos em agliconas ocorreu em grãos de soja macerados por 6 horas, cujos cotilédones foram cozidos por 15 minutos e submetidos à fermentação por 18 horas.

Abstract: The objective of this work was to evaluate the effect of the processing conditions of soybean tempeh on the contents of β-glycoside isoflavones and on their bioconversion into aglycones. Different times of soaking (6, 12, and 18 hours), cooking (15, 30, and 45 minutes), and fermentation (18, 24, and 30 hours) with Rhizopus oligosporus at 37°C were evaluated for tempeh preparation. Grains from the cultivar 'BRS 267' were used, and the experiment was carried out according to a central composite design (23). The response functions comprised the contents of genistin, malonyldaidzin, malonylgenistin, daidzein, and genistein, quantified by ultraperformance liquid chromatography (UPLC). Soaking, cooking, and fermentation times change the content, profile, and distribution of the different forms of isoflavones in tempeh. The highest bioconversion of glycoside isoflavones into aglycones occurred in 6-hour soaked soybean grains, whose cotyledons were cooked for 15 minutes and subjected to 18-hour fermentation.

An electronic tongue system was tested as a fast and efficient analytical tool for flavor evaluation of soybean genotypes. Grain samples of 25 soybean lines were analyzed using 0.25 g of milled samples added to 100 mL of distilled water and mixing for one minute on a magnetic stirrer. An aliquot (50 mL) from the filtered liquid was used for the analysis on a pre-fixed frequency of 1 kHz and alternate tension of 50 mV. Two analyses were conducted in a complete randomized design with three replicates. Electrical response (capacitance) of eight polymeric chemical sensors used to analyze the soybean lines were submitted to Principal Component Analysis (PCA). In the spatial distribution of the PCA graphic, the lines close to each other were similar, while the distant ones showed different characteristics. The electronic tongue system was efficient in discriminating flavor of soybean lines.

The objective of this study was to prepare roasted and lyophilized tempeh flour with soybean cultivar BRS 267 to apply them in the formulation of coconut biscuits. The cookies produced with whole soy flour and mixed flour of soybean and tempeh were evaluated for proximate composition, fatty acid profile, and isoflavone aglycones in order to verify the effects of inoculation with the fungus Rhizopus oligosporus and those of the drying processes of roasting and lyophilization on the chemical characteristics of the final product. Sensory acceptance and purchase intention of the formulated products were also evaluated. The results indicate the maintenance of linolenic acid, which is important in the prevention of coronary diseases, and an increase in the aglycones levels when the tempeh flour was used. Lipids and proteins showed differences, and the sensory analyses demonstrated similarity between the cookies with satisfactory scores for aroma, flavor, texture, and overall acceptability for both samples. when compared to the control. Purchase intent was also positive for the lyophilized and toasted tempeh flours, thus enabling the use of the roasting process as a simple drying method, for processing tempeh and obtaining a flour rich in proteins and aglycones that can be used as a partial substitute for soy flour in cookies and other bakery products.

O presente trabalho teve por objetivo avaliar os parâmetros físico-químicos e os processos para a produção de brotos de soja a partir de sementes da cultivar BRS 216, bem como sua composição química e aceitabilidade. Foram avaliados o comprimento e o peso dos brotos viáveis, a composição centesimal e os teores de isoflavonas e de inibidor de tripsina. O desenho experimental foi ao acaso com três repetições e os tratamentos foram avaliados num esquema fatorial 3 × 3: três frequências de irrigação (a cada quatro, oito e 12 horas) e três períodos de crescimento (cinco, seis e sete dias). O teste de aceitabilidade dos brotos de soja foi realizado utilizando-se a escala hedônica estruturada de nove pontos, avaliando-se cor, aparência, odor, textura, sabor e avaliação global, além da intenção de compra. A frequência de irrigação com intervalos de quatro horas e o período de sete dias de crescimento foram ideais para produção dos brotos de soja, favorecendo maior produtividade, teores mais elevados de proteínas e menores teores de inibidor de tripsina. O índice de aceitabilidade dos brotos de soja foi superior a 70 em todas as características avaliadas, com exceção do odor.

The aim of the present study was to evaluate the physical and chemical parameters and process for the production of soybean sprouts from the BRS 216 cultivar, as well as determining their chemical composition and acceptability. The length and weight of viable sprouts, proximate composition, and the isoflavone and trypsin inhibitor contents were evaluated. The experimental design was completely randomized with three replications, and the treatments were evaluated using a 3 × 3 factorial design: three irrigation frequencies (four, eight and 12 hours) and three growth periods (five, six and seven days). The soybean sprout acceptability was determined using a nine point structured hedonic scale, evaluating colour, appearance, aroma, texture, flavour, overall evaluation and purchase intention. An irrigation frequency with four hour intervals and a seven day growth period were the best parameters for soybean sprout production, showing high productivity, higher protein content, and a reduced trypsin inhibitor content. The soybean sprout acceptability index was above 70 for all the characteristics evaluated, except for odour.

O tempeh é um alimento obtido por meio da fermentação dos grãos de soja pelo fungo Rizophusoligosporus. É um alimento tradicional da Indonésia que apresenta benefícios para a saúde humana, protegendo contra a diarréia e doenças crônicas. O processamento de tempeh inclui descasque, cozimento, inoculação e fermentação. Nesse estudo, as características químicas de tempeh produzido com cultivares de soja especialmente desenvolvidas para alimentação humana, BRS 216, BRS 232, BRS 257 e BRS 267 foram investigadas. Os grãos das cultivares e os tempehs foram analisados quanto aos teores de óleo e proteína, fatores antinutricionais e teor de isoflavonas. A cultivar BRS 216 apresentou o maior teor de proteína no tempeh (51,99%) e nos grãos (36,81%). Em média, no tempeh, o teor de proteína aumentou 16%. O teor total de isoflavonas foi maior nos grãos do que nos tempehs, com diferenças significativas entre as cultivares. O conteúdo de isoflavonas agliconas aumentou em média cerca de 50% nos tempehs (49,00 mg.100 g-1 em média), quando comparados com a matéria-prima grãos de soja (21,49 mg.100 g-1 em média). O conteúdo de inibidor de tripsina de Kunitz (KSTI) apresentou uma redução de 83% nos tempehs em relação ao conteúdo observado nos grãos. Os teores de ácido fítico nos tempehs e nos grãos de soja foram semelhantes.

Tempeh is a food obtained by fermentation of soybean grains by the fungus Rizophus oligosporus. It is a traditional Indonesian food that presents benefits for human health protecting against diarrhea and chronic diseases. Tempeh processing includes dehulling, cooking, inoculation, and fermentation. In this study, chemical characteristics of tempeh prepared with soybean cultivars specially developed for human consumption (BRS 216, BRS 232, BRS 257, and BRS 267) were investigated. Soybean grains and tempeh obtained from these cultivars were analyzed for oil, protein, antinutrional factors, and isoflavone content. Cultivar BRS 216 presented the highest protein content in the grains (36.81%) and in tempeh (51.99%). On average, the protein content in tempeh increased 16% in relation to that of soybean grains. Isoflavone content was higher in the grains than in tempeh with significant differences among the cultivars. However, the aglycones content increased about 50% in tempeh (49.00 mg.100 g-1 on average) compared to that of raw material (soybean grains - 21.49 mg.100 g-1, on average). The content of Kunitz trypsin inhibitor (KSTI) reduced 83% in tempeh, on average, as compared to the value found in the grains. Phytic acid content was similar in both tempeh and the grains.

O trabalho teve como objetivo avaliar o efeito da colheita em diferentes horários do dia sobre as características químicas e físicas dos grãos de soja da cultivar tipo hortaliça BRS 267, colhidos no estádio R6 (desenvolvimento da semente), e comparar com os colhidos no estádio R8 (maturação). As vagens da cultivar BRS 267 foram colhidas no estádio de desenvolvimento R6 nos horários das 8, 12 e 18 horas e avaliadas a cor e os grãos analisados quanto à composição química, atividade do inibidor de tripsina, teor do ácido fítico, amido, açúcares, ácidos graxos e isoflavonas. O teor de isoflavonas não diferiu entre os diferentes horários de colheita no estádio R6. No estádio R8 foi encontrado maior teor das formas agliconas. Os diferentes horários de colheita não influenciaram na cor das vagens e nos constituintes químicos dos grãos da cultivar BRS 267 colhida no estádio R6. Os grãos colhidos no estádio R6, quando comparados com os colhidos no estádio R8, apresentaram menor teor de proteínas, ácido fítico e sacarose e maior teor de lipídios, carboidratos, amido, glicose, frutose, estaquiose e ácido linolênico. A qualidade da soja tipo hortaliça BRS 267 no estádio R6 não diferiu com os diferentes horários de colheita, contudo, como produto tipo hortaliça, recomenda-se que a colheita seja realizada no período da manhã, cuja temperatura é mais amena, para facilitar a rápida comercialização e consumo como alimento in natura.

The objective of this study was to evaluate the effect of harvest at different times of day on the chemical and physical characteristics of vegetable-type soybean BRS 267 cultivar, harvested at the R6 stage (seed development) and to compare it with that on the grains harvested at the R8 stage (maturation). The pods of the BRS 267 cultivar were harvested at the R6 stage (at 8:00 AM, 12:00 AM, and 6:00 PM), the color parameters were evaluated, and the grains were analyzed for chemical composition, activity inhibitor trypsin, phytic acid content, starch, sugars, fatty acids, and isoflavones. No differences were observed among the different harvest times in terms of the chemical constituents of vegetable-type soybean BRS 267 cultivar harvested at the R6 stage. Isoflavones content did not change with different harvest times, and the aglycone forms (daidzein, glycitein, and genistein) were found in smaller quantities at the R6 stage compared to the R8 stage. The color of the pods of soybean BRS 267 cultivar, harvested at the R6 stage did not change with different harvest times. The grains harvested at the R6 stage had lower protein content, phytic acid, and sucrose and higher levels of lipids, carbohydrates, starch, glucose, fructose, stachyose, and linolenic acids than those collected at the R8 stage. The different times of harvest did not affect the quality of the vegetable-type soybean BRS 267 cultivar harvested at stage R6. Nevertheless, it is recommended to harvest in the morning, when the temperature is milder, like other vegetables, to facilitate and optimize its marketing and in natura consumption.

Devido à maior concentração de isoflavonas nos hipocótilos dos grãos de soja, a indústria de alimentos tem utilizado esse componente do grão como matéria-prima. No presente trabalho, foram quantificados os teores de isoflavonas nas estruturas formadoras do grão de soja (hipocótilo, cotilédones e casca), analisadas por Cromatografia Líquida de Alta Eficiência (CLAE). Foram avaliadas quatro cultivares de sojas especiais: BRS 184, BRS 216, BRS 257 e BRS 267, desenvolvidas pela Embrapa Soja. Todas as cultivares apresentaram maior teor de isoflavonas totais no hipocótilo (média de 2029,32 mg.100 g-1). No grão inteiro (267,16 mg.100 g-1) e nos cotilédones (209,16 mg.100 g-1), os teores de isoflavonas foram cerca de dez vezes menores do que nos hipocótilos. A cultivar BRS 216 apresentou o teor maior de isoflavonas totais no hipocótilo (2583,20 mg.100 g-1). Embora a casca da soja não apresente isoflavonas, observou-se que esses compostos estavam presentes nessa parte do grão numa quantidade média de 105,58 mg.100 g-1, devido à presença de resíduos do hipocótilo e dos cotilédones provenientes do processo de descasque. Essa composição residual da casca favorece sua utilização como matéria-prima fonte de fibras, porque também fornece isoflavonas e outros compostos da soja.

Due to the higher concentration of isoflavones in the soybean hypocotyls, the food industry has used this component of the bean as a raw material. This paper reports the isoflavone contents found in the different parts of the bean (hypocotyl, cotyledon and hull) as analyzed by High Performance Liquid Chromatography (HPLC). Four special soybean cultivars, BRS 184, BRS 216, BRS 257 and BRS 267, developed by Embrapa Soybean, were evaluated. All the cultivars presented higher contents of total isoflavones in the hypocotyls (average of 2029.32 mg.100 g-1). The isoflavone contents of the whole beans (267.16 mg.100 g-1) and the cotyledons (209.16 mg.100 g-1) were about 10 times lower than that of the hypocotyls. Cultivar BRS 216 presented the highest total isoflavone content in the hypocotyl (2583.20 mg.100 g-1). Although soybean hulls do not contain isoflavones, an average of 105.57 mg.100 g-1 was found in this component, due to the presence of hypocotyl and cotyledon residues resulting from the hulling process. This residual composition of the hulls favors their use as a raw material that is a source of fibers, also providing isoflavones and other soybean compounds.

O objetivo deste trabalho foi analisar mudanças no perfil de isoflavonas, determinado por meio de cromatografia líquida de alta eficiência, em diferentes estágios do processamento e após refrigeração de 'tempeh'. Para a produção do 'tempeh', grãos de soja limpos das cultivares BR 36 (baixo teor de isoflavonas) e IAS 5 (alto teor) foram descascados, e os cotilédones foram hidratados e, em seguida, cozidos por 30 min em água fervente. Em seguida, esporos do fungo Rhizopus microsporus var. oligosporus foram inoculados nos cotilédones cozidos e resfriados, e incubados a 32ºC por 6, 12, 18 e 24 horas em sacos perfurados de polipropileno, para fermentação. O 'tempeh' resultante foi refrigerado por 6, 12, 18 e 24 horas. Após 24 horas de fermentação, os teores de glicosídeos de isoflavonas reduziram-se em 50%, e os das formas agliconas aumentaram, em ambas as cultivares. Após o cozimento, as formas malonil reduziram-se em 83%. A refrigeração por menos de 24 horas não afetou o perfil de isoflavonas no 'tempeh' das duas cultivares, o que é um bom indicador de sua qualidade. O 'tempeh' mantém os altos e baixos conteúdos de isoflavonas das cultivares, o que indica que as diferenças entre cultivares, para esta característica, devem ser consideradas durante o processamento de 'tempeh'.

The objective of this work was to analyze changes in the isoflavone profile, determined by high performance liquid chromatography, at different processing stages and after refrigeration of tempeh. For tempeh production, clean soybean grains from cultivars BR 36 (low isoflavone content) and IAS 5 (high) were dehulled, and the separated cotyledons were hydrated and then cooked in boiling water for 30 min. Spores of the fungus Rhizopus microsporus var. oligosporus were inoculated in the cooked and cooled cotyledons, and incubated at 32ºC for 6, 12, 18, and 24 hours in perforated polypropylene bags, for fermentation. The resulting tempeh was stored at 4ºC for 6, 12, 18, and 24 hours. After 24-hour fermentation, isoflavone glucosides were 50% reduced, and the aglycone forms in the tempeh from both cultivars was increased. The malonyl forms reduced 83% after cooking. Less than 24 hours of refrigeration did not affect the isoflavone profile of tempeh from either cultivar, which is a good indicator of its quality. The tempeh maintains the high and low isoflavone content of the cultivars, which indicates that cultivar differences in this trait should be considered when processing tempeh.

Vinte variedades de soja (Glycine max), quatorze convencionais e seis variedades transgênicas (RR) foram analisadas quanto ao teor de proteína, ácido fítico, teor de óleo, fitosteróis, cinzas, minerais e ácidos graxos que foram tabelados e apresentados à rede neural do tipo perceptron de múltiplas camadas para a classificação e identificação quanto a região de plantio e quanto a variedade convencional ou transgênica. A rede neural utilizada classificou e testou corretamente 100% das amostras cultivadas por região. Para o banco de dados contendo informações sobre sojas transgênicas e convencionais foi obtido um desempenho de 94,43% no treinamento da rede, 83,30% no teste e 100% na validação.

Twenty soybean (Glycine max) varieties, 14 conventional and 6 transgenic varieties were analyzed for protein content, phytic acid, oil content, phytosterols, ash, minerals and fatty acids. The data were tabled and presented to the multilayer perceptron neural network for classification and identification of their planting region and whether they were a conventional or transgenic. The neural network used correctly classified and tested 100% of the samples cultivated per region. For the data bank containing information on transgenic and conventional soybean, a performance of 94.43% was obtained in the training of the neural network, 83.30% in the test and 100% in the validation.

O trabalho foi conduzido com o objetivo de descrever os atributos sensoriais de bebidas de extratos de soja em pó produzidos a partir de cultivares desprovida de lipoxigenases, convencional e tipo hortaliça e dois extratos comerciais e correlacioná-los com as quantidades de isoflavonas e n-hexanal nos extratos em pó. Os extratos de soja em pó obtidos em laboratório foram caracterizados pelos atributos: aroma de feijão cozido e de algodão doce; sabor de grão cozido, de malte e gosto doce sugerindo, sabor suave. Os extratos comerciais apresentaram forte aroma de soja tostada, de ranço, de sementes de gergelim e de peixe; sabor de soja tostada, gosto amargo e de sementes de gergelim; gosto amargo (com nariz preso) e consistência de amido. Não foram observadas diferenças sensoriais entre os extratos produzidos em laboratório, indicando a ocorrência da inativação das enzimas lipoxigenases durante o processamento dos produtos. Contudo, diferenças marcantes entre os extratos obtidos em laboratório e os comerciais quanto aos atributos sensoriais estudados foram encontradas provavelmente, devido às técnicas desconhecidas de processamento utilizadas pelos fabricantes dos produtos comerciais. O teor médio de n-hexanal presente nos extratos de soja comerciais e produzidos em laboratório apresentou correlação positiva e significativa com o atributo aroma de grão cozido, já a quantidade de isoflavonas com aroma de grão cozido e de algodão doce, sabor de grão cozido, de malte, gosto doce e consistência de amido.

The objective of this work was to study the sensory attributes and their relationships with isoflavones and hexanal contents of soymilks made in laboratory and commercial samples. The laboratory soymilk samples showed cooked grain and cotton candy aroma and cooked grain, malty and sweetness flavor (a mild flavor). The commercial samples presented stronger roasted soy, rancid, sesame seeds and fishy aroma and roasted soy, sesame seeds and bitterness flavor, and bitter taste (closed nose) and starchy texture. No differences were noted among laboratory soymilks, denoting inactivation of lipoxygenases enzymes in the soymilks process. There were differences between the samples prepared in laboratory and commercial soymilks, which was due to several factors related to processing techniques. The hexanal average content was positively associated with the cooked grain aroma and isoflavones was positively associated with the cooked grain and cotton candy aroma, cooked grain, malty and sweetness flavor and starchy texture.

O objetivo deste trabalho foi avaliar concentrações de isoflavonas nas sementes de diferentes cultivares brasileiras de soja cultivadas numa amplitude de condições ambientais e de locais no Brasil. Sementes de 233 cultivares semeadas em Ponta Grossa, PR, na safra de 2001/2002, e sementes de 22 cultivares plantadas em diferentes locais das regiões Nordeste, Sudeste e Sul foram analisadas quanto ao teor total de isoflavonas, incluindo daidzina, glicitina, genistina e acetilgenistina. O total de isoflavonas variou entre 12 mg 100 g-1 (cv. Embrapa 48) e 461 mg 100 g-1 (cv. CS 305) entre as 233 cultivares plantadas em Ponta Grossa, e essas diferenças são devidas aos efeitos genéticos, pois todas foram cultivadas e colhidas no mesmo local e ano. Isso indica que há possibilidade de melhoramento genético para o teor de isoflavonas. Diferenças no teor de isoflavonas observadas nas cultivares plantadas nos diferentes locais de semeadura permitem selecionar locais segundo a concentração ótima de isoflavonas (reduzida ou alta), dependendo do uso da soja. No Nordeste (5-8°S), concentrações mais altas de isoflavonas totais foram observadas nos municípios São Raimundo das Mangabeiras (232 mg 100 g-1) e Tasso Fragoso (284 mg 100 g-1). No Sul (23-30°S), as concentrações de isoflavonas foram maiores nos municípios Guarapuava, Canoinhas, Vacaria e Campos Novos, com amplitude de 130 a 409 mg 100 g-1.

The objective of this work was to evaluate isoflavone concentrations in seeds of different Brazilian soybean cultivars grown in a range of locations and environmental conditions in Brazil. Seeds of 233 cultivars grown in Ponta Grossa, PR, Brazil, during the 2001/2002 soybean season, and of 22 cultivars sown in different locations of Brazilian Northeast, Southeast on South regions were analyzed for total isoflavones, including daidzin, glycitin, genistin and acetylgenistin. The total isoflavones ranged from 12 mg 100 g-1 (cv. Embrapa 48) to 461 mg 100 g-1 (cv. CS 305) among the 233 cultivars grown in Ponta Grossa, and the differences among them are due to genetic effects since all cultivars were grown and collected at the same locatation and year. This is an indication of the possibility of breeding for isoflavone content. Differences in isoflavone content observed in the cultivars grown in different locations permit the selection of locations for optimum isoflavone content (low or high), depending on the uses of soybean. In the Northeast region (5-8°S), higher concentrations of total isoflavones were observed at São Raimundo das Mangabeiras (232 mg 100 g-1) and Tasso Fragoso (284 mg 100 g-1) municipalities, and in the South (23-30°S), isoflavones were higher in Guarapuava, Canoinhas, Vacaria and Campos Novos municipalities, ranging from 130 to 409 mg 100 g-1.
